Part Two: Finished Compost Florida;What it is — and what it is not

The day the trommel arrived was a long one for sure.
There were transport issues — the kind that come with moving large equipment across any meaningful distance, the kind that stack frustration on top of logistics on top of the particular anxiety of waiting for something important that is not yet in your possession. These things happen. Equipment moves when it moves, on its own schedule, indifferent to the timeline you had carefully arranged in your head.
It did not seem to matter.
Because this was a dream for Allen Fant. He started this work in 2009 — not with a business plan or a market study, but with the thing he has always had in abundance: curiosity. Wonder. A stubborn, generous hope for what could be done with a piece of North Florida ground if you paid close enough attention to what it needed. Ten years of that curiosity had been building toward the machine now making its way down the highway toward Levy County, on a hot summer day in 2019 and when something you have wanted that long is finally almost here, a few hours of transport delay is nothing. It is barely weather.
So there was a buzz across our little family. The particular electricity that moves through a farm when something new is coming — something that will change the daily rhythm, that will earn its own vocabulary in the ongoing conversation that is life on this land.
It is funny how machines become that. Integral. Named — or in the trommel's case, famously not named, because Allen put his foot down, which you know if you read Part One. The John Deere tractors are referenced by their numbers: "I'll get the 5105." The loader is just the loader — one of them, singular, irreplaceable, mentioned constantly because it is constantly needed. And now the trommel. You talk about it the same way. When it runs, the day is organized around it. When it doesn't, everything reorganizes around fixing it. That is the contract you make with a piece of equipment that matters. It earns its place in the daily language of the farm by being indispensable to the rhythms of farm life.
This one had already earned it before it arrived. It came to us with a history — a decade-plus of doing real work at Reedy Creek, Disney's composting operation, the one we spent all of Part One talking about. It knew what it was for. It just needed a new field.
I had planned to tell you about water next.
That was always where this series was going — the wetlands, the carbon, the geology of Florida's aquifer, the way a healthy amended soil doesn't shed water into drainage ditches but absorbs it, filters it, protects it. That story is real and important and we will get there.
But I got to thinking, the way you do when a series starts to take shape and you realize you skipped a step.
I introduced you to the trommel. I set the scene at Disney World — the Florida wetland, the conservationist who dreamed it up, the engineers who built the process, Duncan Wardle carrying Walt's pry bar questions of what if into a new generation. I told you about the innovation. I told you about the trying and the failing and the learning from failing and the trying again — which is just what any curious scientist does, and what Allen has been doing since 2009. I told you about the winning: thousands of trees and plants growing across the parks, gorgeous and welcoming, all from the wheel and cycle of waste to something extraordinary.
And then I was going to jump to water.
But there is a gap. And I need to fill it first.
Before I can tell you what good compost does for water, for carbon, for the underground community that makes everything above it possible — I need to tell you unequivocally what compost is. And what it is not.
Because these two things are being confused constantly, in garden centers and Facebook groups and well-meaning conversations between neighbors, and that confusion is doing real damage to a science that is quietly set to change the world — the science of what lives in the ground beneath our feet, what it requires to thrive, and what is at stake for every living system on this planet if we get it wrong. A misunderstanding about compost is not a gardening problem. It is a literacy problem.
Franklin Roosevelt understood the stakes. In 1937 — writing to every governor in the United States during the Dust Bowl — he put it plainly:
"The Nation that destroys its soil, destroys itself." — Franklin D. Roosevelt, Letter to all State Governors on a Uniform Soil Conservation Law, February 26, 1937
That was not a farming problem he was describing. It was a civilization problem. It still is. And I cannot in good conscience skip past the foundational literacy on my way to the wetlands story.
So. Part Two is not the water. Part Two is the clarification that makes the water story make sense.
The Process Is the Science
Before the numbers, I'll attempt to explain something plainly — because there is a lot of noise out there and people deserve a clear signal.
The question most people ask about compost is: is this safe?
The more important question is: did this material go through the process?
Because if it went through the process — if it was properly built, if it reached and sustained the thermophilic temperatures that pasteurization requires, if it was turned at the right intervals to expose all material to heat, if it was given the time and conditions to finish — then the answer to the safety question is already embedded in the biology. The process itself is the sterilizer. The process itself is the science.

Think about what happens when you don't cook the chicken to temperature. You know instinctively that something will go wrong. Not because you studied food science — because you have been told your whole life that the process matters, that the heat is not optional, that skipping it has consequences you will feel. Compost works exactly the same way. The thermophilic temperatures are not a guideline. They are the mechanism. They are what makes the biology do what it is supposed to do. Skip the heat and you skip the transformation — and what you have is not compost. It is just raw chicken that hasn't been cooked yet.
Will Harris of White Oak Pastures — a fourth-generation Georgia cattleman who spent decades in industrial agriculture before rebuilding his farm from the soil up — describes the cycle this way:
"I used to buy chemical fertilizer, feed it to corn plants, then feed the corn grain to my cattle. Now I make compost from the dead plant and animal material that I compost on my farm. Then I feed this compost to my soil microbes. The soil microbes feed my grasses, and the grasses feed my cattle. That is the cycle. That is what the process produces when you follow it all the way through — not just a product, but a relationship between soil and plant and animal and human that is self-reinforcing, self-sustaining, and measurably better than the linear model it replaces.
Think of it this way.
Flour is an ingredient. Chicken stock is an ingredient. Neither one is chicken pot pie. You cannot hand someone a bowl of flour and call it dinner. Raw manure, raw food waste, raw yard trimmings — these are ingredients. They are what the natural world has always produced, has always intended to return to the soil, has always meant to cycle back through the biological community below our feet. That return is not a new idea. It is the oldest cycle on earth.
Compost is what comes out of the process when those ingredients have been combined correctly, given the right conditions, managed through the biology, and finished. The chicken pot pie. Ready to serve. Tested and confirmed.
The problem is not compost. The problem is people skipping the process and serving you a bowl of flour.
What Skipping the Process Looks Like
You have seen it. You may have bought it.
Someone cleaned out their horse stalls last Tuesday. The material is fresh. It has not been in a windrow. It has not reached temperature. It has not broken down. It is, technically, organic material — but it is not compost. It is nitrogen-hot, potentially pathogen-carrying, weed-seed-laden raw ingredient that has not been given what it needs to become what it is supposed to become.
You put it on your garden and things go wrong. Your plants struggle because the decomposition process continues in your soil, robbing nitrogen from the root zone rather than releasing it into it.
And you think: compost doesn't work.
True, finished compost would have worked fine. The process was skipped. You had the ingredients for compost -"the feedstock" but not the finished product. Only the finished product can be called — Compost.
You find it on Facebook sometimes — someone with a pickup truck and good intentions, offering loads of material that has never seen a thermometer, a turning schedule, or a finished compost analysis. You cannot know what is in it. You cannot know the pathogen load, the salt index, the weed seed viability, or whether it is stable enough to go near a plant without causing harm.
We know what is in ours. Because we test it.
What the Test Actually Says

Our most recent STA Compost Analysis came back from TPS Lab for June 2026. Samples collected for the Q2, round of quarterly testing. Here is what it found, in plain language.
◆ Cucumber Bioassay: 100 out of 100. The USCC STA program requires 80% to pass. Cucumber seedlings grown in our compost showed 100% emergence and 100% seedling vigor compared to control. Plant description: Very Healthy. A perfect score. Our compost is not burning roots, not suppressing germination, not releasing anything that harms plant growth. It is actively supporting life at the highest measurable level.
◆ Pathogens: Zero. Total coliform: Pass. Fecal coliform: zero. Salmonella: below detection limit. Zero pathogens. This is what EPA Class A pathogen standards require and what every buyer deserves to know.
◆ All trace metals: Pass. Arsenic, cadmium, mercury, lead, selenium, nickel, chromium — every heavy metal tested against EPA 40 CFR § 503.13 Class A federal standards. Many were below detection limit entirely. Clean material by every federal measure.
◆ Agricultural Index: 24.19. The scale considers anything above 10 to be ideal for application on all soil types. We are more than double that threshold. This measures the ratio of beneficial nutrients to potentially harmful salts. Your soil is safe. Your plants are safe. This compost can go on anything.
◆ Stability: Very Stable. The decomposition is finished. This material will not burn roots, will not rob nitrogen from your soil when applied. It is ready.
What the numbers collectively tell us is that this is finished, stable, EPA Class A pathogen-compliant compost that supports plant life at the highest measurable level.
"Well done good and faithful servant."
That is the daily goal. Not heroic. Not revolutionary. Faithful, documented, measurable — and then you do it again.
What to Look For — and What to Watch Out For
Here is what matters when you evaluate any compost — ours or anyone else's.
◆ Stability. Unstable, uncured compost is still actively decomposing. When you apply it, it continues that decomposition in your soil — robbing nitrogen from the root zone, potentially burning plants rather than feeding them. You will not see this advertised. You will see it in your garden.
◆ Salt. Compost made from concentrated manures that have not been properly processed can carry high soluble salt loads. High salt injures plants — it pulls moisture away from roots rather than feeding them. Our Agricultural Index of 24.19 tells you our material carries no salt injury risk on any soil type. Unprocessed material from last week's stall cleaning cannot tell you that, because it has never been tested.
◆ The process. Ask. If the answer is "we don't have one," what you are buying is ingredients, not compost. The dish is not ready to serve.
The misinformation out there is not complicated to counter. Anyone who opens google and looks up thermophilic composting finds the same answer every time: a properly heated, properly managed, properly finished compost does what it has always done. It stabilizes. It becomes beneficial. The biology is not mysterious. The process is not secret nor new. Our test results prove we followed it all the way through.
Why We Test — The Real Reason
There are two ways to think about soil testing and both of them matter.
The compliance version: our FDEP Registration renewal requires it. The US Composting Council requires quarterly testing. We meet these requirements. That is not the only why when we test.
The real version: we are students. The land is our teacher.
The soil community running through our windrows and our worm beds and the 100 acres of Levy County ground we are responsible for is older and more complex and more intelligent than anything we will build on top of it. Our job — the actual job, beneath all the regulatory language and the product labels — is to understand what it is telling us.
Testing is how a student does the work. Not to prove something to a regulator. Not to win an argument. To understand. To know. To be accountable to the biology in a way that requires humility, because the numbers tell you the truth whether you want to hear it or not.
Will Harris has been farming regeneratively for over twenty-five years. Here is what he found:

That is what staying curious produces. That is what twenty-five years of testing, adjusting, observing, and not landing produces. Not a finished farm. A better one, every season, indefinitely.
We are lifelong agricultural learners — curious about soil science in a modern world and a traditional one simultaneously — understanding that what was happening at Reedy Creek and what is happening in our windrows is the same thing: the patient, documented, iterative work of returning organic material to the ground in the right way, learning from the results, and continuing.
That is science. That is stewardship. That is what the land asks of us.
The Bigger Picture
This is not just about our compost yard.
Every ton of organic material that goes through the process and returns to the soil is a ton that does not go into a landfill. Every pound of nitrogen cycled back through a properly managed windrow is a pound that does not run off into a waterway and feed an algae bloom. Every yard of finished compost that goes into depleted sandy Florida soil is a step toward the biological function that the soil food web requires to do its job.
Compost is becoming more than beneficial. It is becoming essential — as essential as water, as essential as sunlight, as essential as the mycorrhizal network threading through the roots of every live oak on this property. You cannot grow without it. You cannot sustain agriculture without it. And you cannot rebuild it without the faithful, unglamorous, daily work of doing the process right and testing to confirm that you did.
Walt Disney was composting biosolids and food waste and horse manure at a six-acre facility in Central Florida before most of us had heard the word trommel. He was not ahead of his time. He was paying attention to what the biology required and doing something about it.
FDR wrote about this to every governor in the country in 1937. Walt Disney World was practicing it in 1988. Will Harris rebuilt a four-generation farm around it starting in the mid-1990s. Allen Fant started asking the What If questions in 2009.
The thread is long. The stakes are real. The science is not new — it is ancient, and we are only now remembering how much we need it.
You Never Land

You get to a good place — and we are in a good place, the numbers say so, the biology says so — but you do not stop observing. You do not stop adjusting. You do not stop wondering what the next test will reveal, what the next batch will teach you, what the fence line is doing this month that it wasn't doing last month.
If you stop wondering, you go stale. The biology keeps moving. The ecosystem keeps evolving. The soil food web keeps building something below your feet whether you are paying attention or not, and your job is to stay curious enough to keep learning what it is building and humble enough to adjust when the results tell you to.
Walt called it imagination. Duncan called it the creative mindset. Will Harris calls it radically traditional farming. We call it soil science. Reedy Creek's composting program ran for over twenty years and then evolved into something different because the technology and the understanding evolved. Nothing is fixed. Nothing is finished. The quarter-inch openings in the trommel drum let through what is ready and hold back what is not — and what is held back goes back into the process, not into the waste stream, because in this system there is no waste stream.
Nothing wasted. Everything in relationship.
The process of learning and growing in knowledge and understanding is never finished.
